Coming from 100% iberian pigs cured in traditional drying cellars maintaining their optimal organoleptic characteristics. This ham offers a distinctive taste, aroma and texture on the palate.
The Acorn-fed Ham 100% Iberian Julián Martín has a curing process at a minimum of 40 months in natural drying cellars, which gives it a juicy and unctuous texture on the palate. A taste of acorns that makes it the best Acorn-fed Ham of Guijuelo.
Features of 100% Iberian Bellota Ham:
Breeding: 100% Iberian pigs (parents inscribed in the Herd Book) raised in freedom in our farms all their lives.
Feeding: grass, natural pastures and acorns during mast-feeding (October/ March).
Curing time: more than 40 months.
Elaboration: cured hams which follow Guijuelo's traditional method. Salted by hand in piles, natural drying sheds and cellars.
