Artisan, delicious and healthy. This Acorn-fed Ham comes from Iberian pigs raised in freedom in large pastures and fed with typical roots, grass, acorns and fruits from the pastureland.
The result is the distinctive taste of a ham which has traditionally been made and cured for more than three years in Guijuelo Mountains' natural dryers. Pleasant to the palate and melting in the mouth!
An excellent Iberian Acorn-fed Ham we achieve by a thorough follow-up in terms of elaboration and conservation. It is specially selected to meet all guarantees of quality and uniformity!
Features of Acorn-fed Ham :
Origin: Guijuelo (Salamanca).
Breeding: hams from 50% or 75% Iberian pigs (inscribed in the Herd Book) raised in freedom in our farms all their lives.
Feeding: grass, natural pastures and acorns during mast-feeding (October / March).
Curing time: 3 years (1000 days).
Elaboration: cured hams which follow Guijuelo's traditional method. Salted by hand in piles, natural drying sheds and natural wineries.
Tasting notes: accentuated/intense acorn taste with a final aftertaste. Reddish cut and whitish marbling (almost transparent).
