Origin: Guijuelo (Salamanca).
Breeding: hams from 50% or 75% Iberian pigs (inscribed in the Herd Book) raised in freedom in our farms all their lives.
Feeding: grass, natural pastures and acorns during mast-feeding (October / March).
Curing time: 3 years (1000 days).
Elaboration: cured hams which follow Guijuelo's traditional method. Salted by hand in piles, natural drying sheds and natural wineries.
Tasting notes: accentuated/intense acorn taste with a final aftertaste. Reddish cut and whitish marbling (almost transparent).
