Features of the Semi-BoneLess Bellota Palette
Origin: Guijuelo (Salamanca).
Preparation: Traditional Guijuelo processes. Manual salting in a system of batteries, dryers and natural wineries.
Curing time: 18 months in natural wineries.
Race: Pigs 50% or 75% Iberian.
Power supply: Bellotas, herbs and natural pastures.
Format: Acorn palette over 5 kilos of weight without the fan bone and peeled for a simple cut and better use of the piece. Vacuum packed and ready for consumption. Semi-bone weight between 3.3 and 3.7 Kg.
Tasting note: accentuated/intense acorn flavor with a final aftertaste. Reddish cut and whitish veining (almost transparent).
