Features of the Iberian Bellota Palette:

Origin: Guijuelo (Salamanca).

Elaboration: traditional processes of Guijuelo. Manual salting in battery system, natural dryers and natural wineries.

Tasting note: accentuated/intense acorn flavor with a final aftertaste. Reddish cut and whitish veining (almost transparent).

Curing time: 24 months in natural wineries.

Breeding: 100% Iberian pigs.

Feeding: acorns, herbs and natural pastures.

Format: whole piece.
