Origin: Guijuelo (Salamanca).
Elaboration: lean chosen from Iberian pork fed with acorns during the Montanera phase.
Ingredients: Iberian pork meat and fat, salt, spices, dextrose, lactose, dextrin, soy protein, milk proteins,
emulgeants (E-450, E-452), antioxidant (E-331, E-301), preservatives (E-252,E-250).
Curing time: 6 months in natural wineries.
Breeding: Iberian pig.
